In Celebration of

Simone Chong Ah-Min (nee Ng Wing Keng)

May 6, 1937 -  August 6, 2024

It is with profound sadness and heavy hearts that we announce the passing of our dearest Simone who passed away peacefully at the age of 87 at Trillium Health Partners - Mississauga Hospital.

She was the beloved wife of the late Roland Hop-Lin Chong Ah-Min, loving mother of her 4 children, Jimmy(Tina), Christine(Alain), Tommy(Corinne) and Catherine(Robert). She was a Proud “Popo” (grandmother) to Emily(Christopher), Dwayne(Amy), Kelsey and Liam. Lastly, she was super proud and blessed to be the “PoTai”(great grandmother) of Allison and Sophie.

Her favorite pastime was being in the company of her loved ones. She enjoyed big gatherings with family and friends. She loved sports, especially tennis and basketball. She was a big fan of the Raptors. Simone had a passion for good food. It brought her a lot of joy teaching and passing down recipes to her children. Some of her famous Mauritian dishes included Founne moune (pork in red sauce, Chinese mushroom and tofu), vindaye (pickled fish), kiaw pan(savory crepes with Chinese chives) and much more. Her cooking lessons gave her great satisfaction and pride.

She will be dearly missed by many and will forever be in our hearts.

In lieu of flowers, donations can be made to Trillium Health Partners in Simone Chong Ah Min’s honour.

Yes, our friendship went way way way back in the early 50's.
She used to tease me when I was a little kid with my broken creole , hanging around in her La boutique, Cascade Store.
